Lincoln County Schools has officially released its March breakfast and lunch menus, and this month brings more than just new meal options. March also marks the celebration of National School Breakfast Week, a nationwide event that highlights the critical role school breakfast plays in supporting student achievement, health, and overall well-being.

As part of our commitment to continuous improvement, our cooks spent their February professional development day engaged in hands-on, from-scratch culinary training. The session was led by Sharon Maynard of the American Dairy Council and Mary Cook of the WVDE Office of Child Nutrition. Together, they introduced staff to creative “Smart Swap” recipes designed to enhance flavor, improve nutritional quality, and increase student appeal while maintaining compliance with USDA meal pattern requirements.

During National School Breakfast Week, students will see four of these newly learned recipes featured on the breakfast menu:

  • Peachy King Smoothie

  • Chunky Monkey Smoothie

  • Apple Nachos

  • Breakfast Fruit Crisp and Yogurt

These items were selected not only for their nutritional value but also for their strong student appeal during taste testing and training. Each recipe incorporates fresh fruit and dairy components that are offered with whole grains to provide balanced meals that fuel students for academic success.

School breakfast remains one of the most effective tools we have to combat food insecurity and ensure students start their day ready to learn. In a district where many families face economic challenges, access to a healthy breakfast at school is not simply convenient, it is essential.

We are proud of our child nutrition team for embracing professional growth and bringing innovative, student-centered recipes to our cafeterias. We encourage families to review the March menus and join us in celebrating National School Breakfast Week March 2-6, by reminding students to eat breakfast at school.
